Threadfin En Papillote
Ingredients
1 Pak Choy, sliced
4 Shiitake mushrooms, sliced
1 Asian shallot, thinly sliced
1 garlic, julienne
1/2 chilli, julienne
2 Kaffir lime leaves
1 tbs fish stock and butter
1/2 bunch coriander, thai basil and mint
1 tbs crispy shallots and sesame seeds roasted
2 mid-fillets King Threadfin Salmon
Method
Cut all the vegetables and mix together in a bowl.
Place the vegetables on a large sheet of baking paper. Place the fish fillets on top of the vegetables. Drizzle with the fish stock and butter. Fold into a paper package.
Place the paper package on a baking tray and place into a preheated oven at 180 degrees celsius. Cook for 12-15 minutes.
Open package and place ingredients on a plate.
