Threadfin En Papillote

Ingredients

  • 1 Pak Choy, sliced
  • 4 Shiitake mushrooms, sliced
  • 1 Asian shallot, thinly sliced
  • 1 garlic, julienne
  • 1/2 chilli, julienne
  • 2 Kaffir lime leaves
  • 1 tbs fish stock and butter
  • 1/2 bunch coriander, thai basil and mint
  • 1 tbs crispy shallots and sesame seeds roasted
  • 2 mid-fillets King Threadfin Salmon

Method

  1. Cut all the vegetables and mix together in a bowl.
  2. Place the vegetables on a large sheet of baking paper. Place the fish fillets on top of the vegetables. Drizzle with the fish stock and butter. Fold into a paper package. 
  3. Place the paper package on a baking tray and place into a preheated oven at 180 degrees celsius. Cook for 12-15 minutes. 
  4. Open package and place ingredients on a plate. 
  5. Enjoy!
